This meal got me through college and the first few years of working life. It is perfect because it is simple, delicious and very easy to store in individual portions for later.

1lb Whole Wheat pasta of your choice
1lb Organic pasta sauce of your choice
1 Large Zucchini
1 Large Yellow Squash
2 Large Carrots (optional)
Put water in pot and light the burner.
While bringing water to a boil, chop the vegetables into bite-sized pieces. I like to slice the vegetables, and then cut the slices into 4-6 smaller pieces.
When the water comes to a boil, pour the pasta and vegetables in together. Be careful to put the vegetables in slowly and facing away from you to avoid splashing boiling water on yourself.
Cooking times will vary – follow the directions on the pasta package.
When pasta has reached desired tenderness, strain.
Immediately after straining, pour the pasta back in the pot and pour the container of sauce directly on top. The heat from the pasta will heat the sauce and there won’t be any sauce bubble bursts on the stove!
Serve and enjoy!
Put the remaining pasta in individual portioned containers and they are perfect to bring to work or heat up when you are running short on time!
